The holiday when I gain approximately 3.14 lbs
I probably cook more on pi day than any other holiday. Today I’m making 5 pies total – breakfast, lunch, dinner, dessert, and one for my church ladies group coming over tonight.
Breakfast Pie was based on Goat Cheese Quiche with Hash-brown Crust - I halved the recipe and added asparagus. And I made it in a cast iron pan instead of a springform – I didn’t want it so tall. It was pretty tasty. Not the best quiche I’ve ever had, but I didn’t exactly want to get up at 5AM to do some complicated fancy pants stunt.
Lunch is Taco Pie - I looked at the recipe page and see that it’s from a magazine called “Food Management”. Now it doesn’t seem very appetizing – is this going to be some type of cafeteria food? Well, taco pie in theory sounds good, so I”m making it. Subbing out beans for the beef to vegetarianize it.
Dinner is Meal Swap Night so I’m making Tofu Pot Pie and Peanut Butter Yogurt Pie. I didn’t want to spring the $8 for the Greek yogurt so I just bought normal yogurt and I’m attempting to strain it to make it thicker. We’ll see how that works out. I can’t imagine it will taste bad either way.
Then my church ladies group is coming over and I’m making Sweet Potato Buttermilk Pie -this one’s probably the most complicated of all of them. But I’ll have plenty of time in the afternoon to put it together.
Plus, coincidentally, I’ve been doing lots of geometry and pi related things in my math studies.
